Prep: 1. Grate parsnips and carrots, set aside in large bowl. 2. Peel and segment grapefruit, reserve juice. 3. Chop cilantro. Make: 1. Whisk together grapefruit juice, oil, vinegar, honey, salt and pepper. 2. Add to carrots and parsnips and toss with cilantro and grapefruit segments.
