Prep: 1. Cook and shred chicken. 2. Chop/slice celery, apples, parsley, and lettuce. 3. Make paleo mayonnaise: Blend egg, vinegar, salt on high power, and pour in olive oil slowly while blending, until mayonnaise is thick. Use right away or store in glass jar in fridge for up to 3 days. Make: 1. In large bowl, combine chicken, celery, apples, parsley, and mayonnaise. 2. Stir in mustard, salt, and pepper and toss to combine. 3. Serve over lettuce.
