Prep: 1. Seed, peel and slice avocado. Make: 1. Heat a skillet over medium-high heat. 2. Add 1/2 teaspoon olive oil and swirl to coat skillet, then immediately crack eggs into skillet. 3. Add 1 teaspoon of water to pan, reduce heat to medium low, cover and cook for 1 minute. 4. Remove eggs from pan, season to taste with salt and pepper. 5. While eggs are cooking toast bread in a toaster or toaster oven. 6. When toast is ready top with avocado slices and an egg. Serve.
