Prep: 1. Preheat oven to 400 and grease a muffin tin or use paper liners. 2. Shred carrots and mash banana. Make: 1. Whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt. Add oats and raisins. Add oil, egg, milk, carrots, and banana and stir until blended. 2. Fill prepared muffin tins about half way and bake until a toothpick inserted into the middle of a muffin comes out clean, 23 to 25 minutes.
These also freeze extremely well! Make sure to cool them completely and cut them into individual servings before freezing. To reheat, pop them in the microwave for 20-40 seconds. It's best to reheat them one at a time if you can. A great healthy breakfast!
