Slow Cooker, Banana and Coconut Milk Steel-Cut Oatmeal

Ingredients

  • 2 bananas, sliced
  • 2 (14 oz) cans coconut milk
  • 1/2 cup water
  • 1 cup steel cut oats
  • 2 tablespoons brown sugar
  • 1 tablespoons butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla
  • 1 tablespoon ground flax seed
  • 1/4 teaspoon sea salt

Directions

Prep: 1. Grease the inside of your slow cooker. 2. Slice bananas and butter. Make: 1. Combine all ingredients in your slow cooker and cook on low for 7 hours. 2. Serve!

Notes

Serve this with any additional desired toppings. We love peanut butter and extra cinnamon. Depending on how sweet you like your oatmeal you may want to add additional maple syrup or brown sugar. The cooking time for this is a little more sensitive than most slow cooker dishes so you may want to experiment once during the day and start checking the oatmeal at 5 hours (try just to eyeball it through the glass lid since lifting it will change the cooking time). Tiny slow cookers often come free with larger ones (or find one at your local Goodwill, there are usually tons!) and are perfect for making small servings of this! A great healthy breakfast!
