Prep: 1. Preheat oven to 400 and grease a muffin tin. 2. Chop prosciutto and chives. 3. Grate cheese. Make: 1. Whisk together the cottage cheese, Parmesan, eggs, and water. 2. Stir in the flour, almond meal, baking powder, paprika, and salt, and beat thoroughly. Fold in the prosciutto and chives. 3. Pour the batter into the muffin tins and bake for 30 to 35 minutes or until done through. 4. Let cool to warm and enjoy!
These also freeze extremely well! Make sure to cool them completely and cut them into individual servings before freezing. To reheat, pop them in the microwave for 20-40 seconds. It's best to reheat them one at a time if you can. A great healthy breakfast!
