Prep: 1. Pit, peel and dice the avocado. Chop chives. Make: 1. Heat butter in a nonstick skillet. 2. Whisk eggs, milk, salt and pepper. 3. Pour eggs into hot pan and stir/flip occasionally until scrambled, about 3-4 minutes. Once scrambled turn off heat and stir in feta. 4. Meanwhile, toast English muffins. 5. Place muffins face up on a plate. Top with scrambled eggs, diced avocado and smoked salmon. Sprinkle with chopped chives.
