Prep: 1. Whisk eggs. 2. Drain and rinse beans. Make: 1. Heat 1 teaspoon oil in a non-stick skillet over medium heat. 2. Add beans and heat, stirring occasionally, about 5 minutes. Remove to a bowl. 3. Wipe out pan, add in remaining oil and return to medium heat, when pan is hot add eggs and cook, flipping/stirring occasionally until scrambled and set, about 4 minutes. Place the eggs in the bowl with the beans. 4. Wipe out the pan and add 1-2 tortillas. Heat tortillas for 30 seconds per side. 5. Divide eggs and beans between tortillas and wrap. Enjoy!
These are also great with your favorite taco toppings - we love salsa, avocado, cilantro, and sour cream! They go great with our Mexican Fruit Salad. To freeze burritos, wrap individual burritos in foil and place in freezer-safe bags. To reheat, unwrap burrito and microwave for 4-5 minutes, let rest for 2 minutes and then enjoy! A great healthy breakfast!
