Prep: 1. Dice peppers and tomatoes. 2. Whisk eggs. Make: 1. Heat 1 teaspoon oil in a non-stick skillet over medium heat. 2. Add bell peppers and heat, stirring occasionally, about 5 minutes. Remove to a bowl. 3. Wipe out pan, add in remaining oil and return to medium heat, when pan is hot add eggs and cook, flipping/stirring occasionally until scrambled and set, about 4 minutes. Place the eggs in the bowl with the peppers. 4. Wipe out the pan and heat tortillas for 30 seconds per side. 5. Divide eggs, peppers, and tomatoes between tortillas and wrap. Enjoy!
These are also great with your favorite taco toppings - we love cheese, salsa, avocado, cilantro, and sour cream! They go great with our Mexican Fruit Salad. To freeze burritos, wrap individual burritos in foil and place in freezer-safe bags. To reheat, unwrap burrito and microwave for 4-5 minutes, let rest for 2 minutes and then enjoy!
