Prep: 1. Preheat oven to 425 and grease a muffin tin. 2. Combine berries and sugar, set aside. Make: 1. Whisk buttermilk, egg, oil, brown sugar and vanilla. 2. In a separate bowl, whisk bran, flour, baking powder, baking soda and salt together. 3. Stir buttermilk mixture into flour mixture until just combined. Fold in the berries. 4. Pour batter into prepared muffin tins and bake for 16 to 18 minutes, until a toothpick inserted into the center of muffins comes out clean. 5. Cool and enjoy!
These also freeze extremely well! Make sure to cool them completely and cut them into individual servings before freezing. To reheat, pop them in the microwave for 20-40 seconds. It's best to reheat them one at a time if you can. Use any fresh fruit that is in season - berries, apricots, peaches, and apples are some of our favorites. The original source advises against pineapple or citrus (we've never tried them so we'll trust that). A great healthy breakfast!
