Prep: 1. Preheat oven to 450 (500 if your oven goes that high). 2. De-rib and chop kale. 3. Mince garlic and slice onion. Make: 1. In a skillet, cook the bacon over medium-low heat. Transfer bacon pieces to a large bowl. Reserve some bacon drippings. 2. Crumble bacon and toss with kale, olive oil and garlic. 3. Roll out pizza dough on a lightly floured surface until it is roughly 12 inches wide and 1/4-inch thick. 4. Sprinkle a baking sheet liberally with cornmeal. Transfer dough to baking sheet. 5. Place kale-bacon mixture on top of crust, then top all with sliced red onions. 6. Brush border of pizza dough with reserved bacon drippings. 7. Bake for 10-12 minutes.
