Prep: 1. Slice chicken into small chunks. Make: 1. Combine everything except oil in large pot with lid, let sit off heat for 5-10 minutes to marinade chicken. 2. Bring to boil, then lower heat and simmer, covered, for about 20 minutes, stirring occasionally. 3. Check chicken for doneness and then simmer, uncovered, for another 5 minutes to reduce liquid. 4. When just a bit of liquid is remaining, add oil to the pot then put the lid back on and fry the chicken. 5. Serve with sauce spooned over the chicken.
