Lamb Burgers with Pea & Mint Relish

Ingredients

  • 3/4 cup frozen peas, defrosted
  • 3/4 tablespoon fresh thyme, chopped
  • 1 1/2 tablespoons packed fresh mint leaves, chopped
  • 3/4 tablespoon jalapeno chile, chopped
  • 2 tablespoons extra virgin olive oil, divided
  • 1 teaspoons fresh lemon juice
  • 1 teaspoon sea salt plus more for taste
  • pinch freshly ground black pepper, to taste
  • 1 pounds ground lamb

Directions

Prep: 1. Defrost peas. 2. Chop thyme, mint leaves, and jalapeno. 3. Juice lemon. Make relish: 1. In a food processor (or blender) add peas, mint, jalapeno, 1 tablespoon oil, and lemon juice. Pulse until finely chopped. Season with salt and pepper, to taste. Can be chilled for up to 2 hours. Make patties: 1. In a large bowl, mix lamb, thyme, 1 1/4 teaspoon salt, and pepper to taste. Form six patties about 3/4 inch thick. 2. Warm a skillet over medium-high heat, add 2 tablespoons of oil. 3. Cook patties in pan until golden brown and cooked through, about 3 minutes per side for medium-rare. 4. Spread pea and mint relish over burgers and on buns or lettuce wraps.

Notes

The relish is completely optional, but it really makes the burger phenomenal! During the spring keep an eye out for fresh peas to really make this shine. If you prefer to grill these just preheat the grill before beginning prep and then when the grill is hot cook burgers for 4-6 minutes per side.
