Prep: 1. Boil water for pasta. 2. Chop basil, salami, cheese, red onion, cherry tomatoes and spinach. 3. Make dressing by whisking together olive oil, vinegar, italian seasoning and red pepper flakes (if using). Set aside. Make: 1. Boil pasta according to package instructions; drain, rinse with cold water, and set aside. 2. Toss everything together (start with about half the dressing and add more as needed). 3. Chill or serve immediately.
This basic pasta salad is perfect for a quick dinner or picnic. Dress is up with olives, artichoke hearts, or red and yellow peppers. We also love to use leftover sausage or chicken in place of the salami.
