Prep: 1. Slice chicken, red pepper, and onion into 1/2 inch pieces. 2. Juice lemon and dice cucumber. 3. Mix sauce by combining yogurt, dill and cucumber. Set aside. Make: 1. Season chicken breasts with Italian seasoning and lemon juice. Heat oil in a skillet over medium heat and cook chicken for 5-6 minutes or until strips are cooked through. 2. Meanwhile, wrap pitas in a damp paper towel and warm in the oven (or heat in a skillet for 1 minute per side). 3. Serve pitas topped with chicken, sauce, peppers and onions (and any other desired toppings)
You can dress these up as much, or as little as you like. They are also great with lettuce, tomato, hummus, and kalamata olives.
