Spicy Peanut Chicken with Oven Rice

Ingredients

  • parchment paper
  • 2 1/4 cups chicken broth
  • 1 bunch broccoli
  • 1 cup white rice
  • 1/4 cup smooth peanut butter
  • 1/4 cup hot water
  • 1/4 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 2 teaspoons sriracha, more or less to taste
  • 2 teaspoons rice vinegar
  • 1 pound boneless, skinless chicken thighs

Directions

Prep: 1. Preheat oven to 350. Grease a 9x9 baking pan and line a rimmed baking sheet with parchment paper. 2. Bring broth to a boil. 3. Cut broccoli into florets. Make: 1. Place rice in prepared baking pan and pour boiling broth over it. Place on bottom rack of the oven. (Rice should cook for a total of 20 minutes.) 2. Meanwhile, whisk together peanut butter, hot water, sesame oil, soy sauce, sriracha, and rice vinegar. 3. Toss chicken thighs and broccoli in sauce, and place on a rimmed baking sheet. 4. 10 minutes after putting the rice in the oven, change oven to broil, and broil the chicken and broccoli on high, 10 inches from heat until chicken is cooked through, about 10 minutes (watch to make sure it doesn't burn).
