Prep: 1. Preheat oven to 450 and line a rimmed baking sheet with parchment paper. 2. Chop cilantro, mince garlic and juice lime. 3. Slice tofu, onions and peppers. Make: 1. Combine 1/2 cup cilantro, lime juice, garlic, cumin, and paprika in a small bowl. Season with salt and pepper. 2. Toss tofu, peppers, and onions with 3/4 cup sauce and let marinate at room temperature for 10 minutes. 3. Mix remaining marinade with 2 tablespoons oil, and honey. Season sauce with salt and pepper. 4. Place tofu, peppers, and onions on prepared baking sheet, season with salt and pepper and roast, stirring vegetables occasionally until tofu is browned, 20-25 minutes. 5. Serve with remaining cilantro and sauce.
The marinade in this makes all the difference! We leave the honey out until the end so that it doesn't burn in the high heat of the oven.
