All-In-One Paella

Ingredients

  • 1 red bell pepper cut into 1/2 inch pieces
  • 1/4 cup chopped onion
  • 1/2 pound boneless skinless chicken thighs cut into 1 inch pieces
  • 1/4 pound chorizo cut into 1/4 inch slices
  • 1/2 pound frozen shrimp, thawed
  • 1/2 tablespoon extra virgin olive oil
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1/2 teaspoon paprika
  • 1/4 teaspoon sea salt

Directions

Prep: 1. Chop peppers, onions and chicken. 2. Slice chorizo. 3. Thaw shrimp. Make: 1. Heat the oil in a large skillet (with a lid) over medium high heat. Add chicken and chorizo slices and brown for 1-2 minutes. 2. Add rice and broth, cover, and simmer for 6 minutes. 3. Add the onions, peppers, and peas and continue to simmer for 3-4 minutes. 4. Add the shrimp, paprika and salt. Continue to simmer until shrimp and chicken are cooked through and rice is done, about 2-4 more minutes.

Notes

This simple version of paella is perfect for a weeknight. It really comes to life if you use yellow rice (rice pre-mixed with saffron) in place of the white rice. Or, if you have it on hand, add 6-8 threads of saffron when you add the rice.
