Prep: 1. Boil water for gnocchi. 2. Chop/mince onion and garlic. 3. Drain and rinse beans. Make: 1. Cook gnocchi according to package instructions. (when done drain) 2. Heat oil in a skillet over medium-high heat. Add onion and garlic and cook until soft, 2-5 minutes. 3. Add cannellini beans, tomatoes, spinach and black pepper, cook until heated through, about 4 minutes. 4. Serve sprinkled with parmesan cheese.
If you use plain canned diced tomatoes make sure to add about a tablespoon of Italian seasoning as you add the tomatoes.
