Prep: 1. Cut chicken into 1 inch cubes and cauliflower into small florets. Season with salt and pepper. Make: 1. In a large skillet with a lid heat oil over medium high heat. When the oil is hot add chicken and brown for about 1-2 minutes per side. 2. Add the rice, salsa verde, and broth. Bring to a boil and then cover, reduce heat and simmer for 10 minutes. 3. Add cauliflower florets and stir to combine. Re-cover and simmer for an additional 5-10 minutes or until rice is tender and chicken is done through.
