Lazy Meatballs with Quick Homemade Tzatziki

Ingredients

  • parchment paper
  • 1 pound spicy Italian sausage
  • sea salt and freshly ground black pepper, to taste
  • 1 lemon, zested and juiced
  • 1/2 cup diced cucumber
  • 1/4 cup fresh mint, chopped
  • 1 cup plain yogurt

Directions

Prep: 1. Preheat oven to 425 and line a baking sheet with parchment paper. 2. Remove sausage from casing (if necessary). Make: 1. Form the sausage into 1 inch balls and place onto prepared sheet. Season with salt and pepper (depending on your sausage additional salt is rarely necessary). 2. Bake meatballs for 15 minutes, or until done through. 3. Meanwhile, make the tzatziki sauce. Zest and juice lemon, dice cucumber and mint. Mix together with yogurt. 4. Serve meatballs with tzatziki sauce.

Notes

These meatballs really are lazy! No breadcrumbs or additional seasonings, just form the meatballs and bake. The homemade tzatziki takes just a couple minutes while the meatballs bake, but really makes this easy meal feel special! If you're feeling ultra lazy you can sub in 2-4 teaspoons of dried dill for the fresh mint. You'll get a different version of tzatziki, but it's still delicious!
