Salmon with Rosemary and Garlic in a Packet

Ingredients

  • aluminum foil
  • 1 pound salmon fillets
  • 2 teaspoons garlic, minced
  • 4 tablespoons lemon juice
  • sea salt and freshly ground black pepper, to taste
  • 1 tablespoon crushed red pepper flakes
  • 1/2 cup extra-virgin olive oil
  • 4 sprigs fresh rosemary

Directions

Prep: 1. Preheat oven to 350 and tear 4 square pieces of aluminum foil. 2. Cut salmon into 4 fillets (if necessary) 3. Mince garlic and juice lemon. Make: 1. Lay each piece of salmon on an aluminum foil sheet and season with salt, pepper, garlic, and red pepper flakes. Top with oil, lemon juice and a rosemary sprig. 2. Fold up the sides of the foil to make a packet. 3. Place packets on a baking sheet and bake 20 minutes, or until salmon is done through.

Notes

This flavorful salmon is simple enough for a weeknight or elegant enough for a dinner party. If you want to take it up a notch use 1/2 cup of white wine in each packet in place of the lemon juice.
