Prep: 1. Pit and slice peaches. Make: 1. Heat 2 tablespoons of oil over medium-high heat. Season pork with salt and pepper. When oil is hot, add pork chops and cook until browned, about 2 minutes per side. 2. Add the remaining olive oil and almonds and cook until almonds are fragrant, about 1 minute. 3. Add water and scrape up any brown bits off the bottom of the pan with a wooden spoon. Reduce liquid by half, about one minute. 4. Check that pork is cooked through, then remove from heat and add in peaches and vinegar.
This is great with apples, pears, and plums as well!
