Prep: 1. Place chicken in a bowl of ice water. 2. Preheat oven to 400 and line a baking sheet with foil. Make: 1. Get out 2 shallow dishes 2. Bowl #1 - Add yogurt. 3. Bowl #2 - Mix flour, salt, pepper, bread crumbs, thyme, basil and oregano into a bowl. Set aside. 4. Dip each chicken piece in yogurt, then in flour mix. 5. Lay chicken on prepared baking sheet. Bake for 45 minutes, or until done (turn every 15 minutes).
Great for picnics and as leftovers. Also great for kids, even young ones. If you prefer substitute 1 1/2 teaspoons Italian seasoning for the other herbs.
