Prep: 1. Core and chop tomatoes. 2. Mince/chop garlic and basil leaves. Make: 1. Cook pasta, al dente. 2. Add chopped tomato to blender, seeds, skin and all. Add cashews, tomato paste, and water. Blend until very smooth. 3. Add olive oil to a large saute pan over medium-high heat. 4. Add garlic and saute until golden, being careful not to burn. 5. Pour sauce from blender into saute pan and bring to a simmer. 6. Add salt and let cook for 4-5 minutes, stirring occasionally. 7. Taste and season more if necessary. Let simmer until pasta is finished cooking. 8. Once pasta is cooked, drain. Add pasta to saute pan with black pepper and freshly chopped basil leaves. Toss to coat. Serve immediately, garnishing with more pepper and basil.
If desired add 3 tablespoons wine or water to thin out the sauce when cooking!
