Prep: 1. Scoop out core of apple, leaving bottom in tact. Make: 2. In a medium bowl, combine coconut oil, brown sugar, pecans and cinnamon. 3. Stuff apples with filling. Microwave on high for 5 minutes. 4. Serve with yogurt drizzled with honey.
Original recipes calls for adding oats and dried cranberries to the filling if you want to take it up a notch. Butter works well as a substitute for coconut oil. Also try placing the apples in a bowl with 1/4 cup apple cider before microwaving them.
