Pork Chops with Pears and Walnuts

Ingredients

  • 2 pears
  • 1 cup walnuts, chopped
  • 4 tablespoons extra virgin olive oil, divided
  • 1 pound pork chops
  • sea salt and freshly ground black pepper, to taste
  • 2 tablespoons red wine vinegar
  • 1/2 cup water

Directions

Prep: 1. Slice pears and chop walnuts. Make: 1. Heat 2 tablespoons of oil over medium-high heat. Season pork with salt and pepper. When oil is hot, add pork chops and cook until browned, about 2 minutes per side. 2. Add the remaining olive oil and walnuts and cook until nuts are fragrant, about 1 minute. 3. Add water and scrape up any brown bits off the bottom of the pan with a wooden spoon. Reduce liquid by half, about one minute. 4. Check that the pork is cooked through, then remove from heat and add in pears and vinegar.

Notes

Everyone knows how great apples and pork chops are, but these pears give apples a run for their money. A delicious fall or winter meal!
