Ricotta-White Cheddar Frittata

Ingredients

  • 1 pound white cheddar
  • 1 cup fresh basil, chopped
  • 3/4 teaspoon canola oil
  • 1/2 cup all-purpose flour
  • 1 1/8 teaspoons baking powder
  • 10 large eggs
  • 3/4 cup unsalted butter, melted
  • 2 cups ricotta
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Prep: 1. Grate cheese. 2. Wash and chop basil. 3. Preheat oven to 350 and grease a pie pan (or 9x9 inch baking pan). Make: 1. Sift flour and baking powder together into large bowl. 2. Mix in eggs, butter, ricotta, cheddar, salt, pepper, basil and olive oil. 3. Pour into prepared pan and bake for about 30 min (or until done).

Notes

If you want to take this dish up a notch try using gruyere cheese instead of white cheddar, or a mix of both!
