Sheet Pan Chicken with Cherry Tomatoes and Garlic

Ingredients

  • 6 cloves garlic, peeled
  • 2 cups of cherry tomatoes
  • 1 1/2 pounds bone-in, skin-on chicken thighs
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon sea salt
  • parchment paper

Directions

Prep: 1. Preheat oven to 375 and cover a rimmed baking sheet with parchment paper. 2. Peel garlic (leave whole) and cut tomatoes in half. Make: 1. Toss everything together on the prepared baking sheet and spread out so chicken skins are able to brown. 2. Place baking sheet in oven and bake for 40 minutes, until chicken is done through and skin is browned.

Notes

We love the sauce that this dish creates, it's perfect over grains, pasta or with a baguette. Reliably delicious and so easy, sheet pan meals are our new favorite! Everything bakes at once and lining the baking sheet with parchment paper (or foil) makes clean up a snap.
