Green Salad with Creamy Mustard Vinaigrette

Ingredients

  • 1/2 teaspoon minced fresh garlic
  • 3 tablespoons champagne vinegar
  • 1/2 teaspoon dijon mustard
  • 1 large egg yolk
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/2 cup extra virgin olive oil
  • 6 cups mixed salad greens

Directions

Prep: 1. Mince garlic. 2. Separate egg. Make: 1. Whisk vinegar, mustard, garlic, egg yolk, salt and pepper in a small bowl. While whisking, slowly add in olive oil until vinaigrette is emulsified. 2. Toss the greens with enough dressing to moisten; serve right away.
