Prep: 1. Preheat oven to 350 and grease two round 6-inch cake pans (or use one 9x13 inch pan, but don't use 2 9-inch round pans - the cake will be too flat). 2. Gently melt coconut oil in a saucepan or microwave. Cool. Make: 1. Mix together flour, cocoa powder, salt, and baking soda. 2. Add egg, coconut oil, and honey. 3. Pour into prepared pans and bake for 20-25 minutes. 4. Meanwhile, make the frosting: Melt chocolate chips and coconut oil over low heat. Mix in vanilla and then refrigerate while the cake bakes and cools. 5. Remove cake from oven and let cool. 6. Whip the frosting with an electric mixer and frost cake.
YUM!! This is so good! Perfect for any birthday. If you include dairy in your paleo diet the cake is also great with grass fed butter (the frosting is best with coconut oil though).
