Prep: 1. Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper. 2. Shred cabbage and cut potatoes in half. Make: 1. Toss cabbage and potatoes with olive oil, salt and pepper. Roast for 25 minutes. 2. Meanwhile, combine mustard, horseradish and lemon zest. Spread over salmon filets. 3. Remove pan from oven, push potatoes and cabbage to one side and add salmon to the pan. Sprinkle everything with lemon juice, return pan to oven and roast 15 minutes.
