Almond Flour Pumpkin Bread

Ingredients

  • 1 cup blanched almond flour
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup pumpkin puree
  • 2 tablespoons honey
  • 3 eggs

Directions

Prep: 1. Preheat oven to 350 and grease a baby loaf pan. Make: 2. Combine almond flour, salt, baking soda and spices. 3. Add 1/2 cup pumpkin (scooped out from rind), honey and eggs and mix with an electric mixer for 3 minutes. 4. Scoop batter into loaf pan. 5. Bake for 35-45 minutes.

Notes

Want to be adventurous and roast a pumpkin?! First, slice pumpkin in half (not on the "equator" but stem to stem). Then remove seeds, lay face down in a pan with 1/4 inch water at bottom. Bake at 350 for 35-45 minutes. Add 1/2 cup of the roasted pumpkin to the blender with the other ingredients.
