Prep: 1. Mince garlic 2. In a small bowl, combine butter, garlic and thyme leaves. Set aside. Make: 1. Heat grill to medium-high. 2. Season pork chops with salt and pepper and drizzle with olive oil. Grill until cooked through, about 6-7 minutes per side. 3. Meanwhile, divide tomatoes between two sheets of heavy-duty tin foil. Close to form two secure pouches. 4. Grill the pouches alongside pork, shaking occasionally, for 8 minutes. 5. Top pork chops and tomatoes with the garlic butter and serve immediately.
