Prep: 1. Slice mushrooms 2. Halve bok choy. Make: 1. Heat oil in a skillet over medium high heat. 2. Add mushrooms and cook, stirring constantly, until fragrant, about 5 minutes. Set aside. 3. Return skillet to heat until hot. Add a little more oil and bok choy cut side down and cook about 1 minute. 4. Season with salt. Stir bok choy until wilted, about 1 more minute. 5. Add mushrooms, toss, and cook about 30 seconds. Serve.
If you can find shiitake mushrooms they are great in this!
