Burrito Bowl

Ingredients

  • 1/2 onion
  • 1 avocado, sliced
  • 1/2 head green leaf lettuce, shredded
  • 2 tomatoes, diced
  • 1/2 head red cabbage, shredded
  • 1 cup white rice
  • 1 tablespoon of canola oil
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1/2 teaspoon dried oregano
  • sea salt and black pepper, to taste
  • 1/2 lime, juiced
  • 14 ounce canned black beans
  • 1 cup salsa

Directions

Prep: 1. Chop/slice onion, avocado, lettuce, tomatoes and cabbage. Make: 1. Cook rice according to instructions. 2. Heat canola oil in skillet and add ground beef, onion, chili powder, oregano, salt and pepper. Cook until beef is cooked through, top with lime juice. 3. Meanwhile, heat black beans in a sauce pan until warmed, 5 minutes. 4. In a large serving bowl layer rice, beans, meat, lettuce, cabbage, tomato, avocado and salsa. Serve.

Notes

Top it off with cheese, cilantro and/or sour cream! Instead of shredded lettuce try shredded kale or your favorite greens.
