Muffin Tin Meatloaf

Ingredients

  • 1 1/2 tablespoons chopped fresh italian parsley
  • 3/4 cup chopped onion
  • 1 carrot, shredded
  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 tablespoon + 1 teaspoon dijon mustard, divided
  • 1 teaspoon soy sauce
  • 3/4 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons honey

Directions

Prep: 1. Preheat oven to 400 and grease muffin tin. 2. Chop parsley, onion and carrot. Make: 1. In a bowl, combine meat, bread crumbs, parsley, onion, carrot, egg, 1 teaspoon dijon, soy sauce, salt and pepper. 2. Divide mix into 12 equal portions and shape into balls. Press balls lightly into greased muffin pan cups. (Can be covered and refrigerated if not using immediately.) 3. In a small bowl, mix tomato paste, 1 tablespoon dijon, and honey. Baste tops of meatloaves with the mixture. 4. Bake for 15 minutes, until meatloaves are firm but moist.

Notes

Equally good with ground turkey! Just make sure to add about 7 minutes to your baking time for the turkey to cook through. Don't have a muffin tin? Form the mix into 2 loaves and place on a baking sheet!
