Prep: 1. Preheat oven to 350. 2. Chop onion and apricots. Make: 1. Heat 1 tablespoon oil in a pan over medium-high heat, add onions and chopped apricots and sauté for about 10 minutes. 2. Mix in a bowl: lamb, egg, sautéed onions and apricots. Add spices and salt and pepper to taste. 3. Form into meatballs and fry for 5 minutes, then bake them for 10 minutes (you can also fry until done; we prefer the fry/baked combo).
These almost never make it to plates at Gatheredtable, they're so good we eat them straight off the baking sheet.
