Roasted Delicata with Lime and Pomegranate

Ingredients

  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 2 cups delicata squash, seeded and sliced
  • 1 teaspoon lime zest
  • 1 tablespoon fresh squeezed lime juice
  • 1/4 cup pomegranate seeds

Directions

Prep: 1. Preheat oven to 375. 2. Halve, seed and slice delicata into half moons. 3. Zest and juice the lime. Make: 1. Combine all spices together in a large bowl with salt and olive oil. 2. Add in the delicata slices and toss well to coat. Spread out onto baking sheet and roast for 20-25 minutes. (flip them halfway through if you can, which ensures sweet caramelizing on both sides) 3. While delicata roasts, whisk together the lime zest, lime juice and pomegranate seeds. Serve: Delicata with lime/pomegranate mixture drizzled on top.

Notes

This is a beautiful, nutritious and simple side dish. Easy enough for every day (especially if you buy pre-seeded pomegranates) but snazzy enough for any holiday meal. If you want to save some $$ (pre-seeded pomegranates can be expensive), you can easily seed your own pomegranate by cutting it in half along the "equator", pressing the center out a bit and whacking the back repeatedly with a wooden spoon (over a large mixing bowl). Then just pick out the inner membrane pieces that fall out too. If you're not counting calories, you can take this up a notch by using 1 tablespoon of butter in place of that much olive oil.
