Prep: 1. Preheat oven to 350 and grease the bottom of a baking pan. 2. If chicken is thick, slice in half lengthwise so that you end up with two thin halves for each breast. 3. Juice lemon and grate cheese. Make: 1. Place chicken in baking pan and rub with garlic and lemon juice. Sprinkle with sea salt and black pepper. Place in oven to bake for 20 minutes. 2. While chicken is baking, cut up artichoke hearts into small pieces. When 10 minutes are left on cooking time, remove chicken in order to add the chopped artichokes to the top of the chicken pieces and sprinkle parmesan cheese on top of each. Return to oven and bake remaining time or until chicken is done through.
