Tomato, Feta, and Thyme Farfalle

Ingredients

  • 2 cups sliced leek
  • 2 garlic cloves, minced
  • 3/4 pound cherry tomatoes, quartered
  • 4 teaspoons minced fresh thyme
  • 8 ounces uncooked mini farfalle
  • 1 tablespoon extra virgin olive oil
  • 1 lemon, juiced
  • 2/3 cup crumbled feta cheese

Directions

Prep: 1. Boil water for pasta. 2. Slice/mince: leek, garlic, tomatoes, thyme. 3. Juice lemon. Make: 1. Cook pasta according to package directions; drain. 2. Meanwhile, sauté leek in olive oil over medium heat for 2 minutes. 3. Add minced garlic; sauté 30 seconds. 4. Stir in lemon juice, pasta, cherry tomatoes, thyme, and feta cheese; toss with pasta and serve.
