Clam Shack-Style Broiled Fish

Ingredients

  • 1/2 cup thinly sliced shallots (about 2 shallots)
  • 1 tablespoon extra virgin olive oil
  • 4 (6-ounce) flounder fillets
  • 1/2 teaspoon paprika
  • 1 tablespoon unsalted butter, melted
  • 2 garlic cloves, thinly sliced
  • 1/2 cup dry white wine
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon coarsely chopped flat-leaf parsley
  • 1 lemon, cut into wedges

Directions

Prep: 1. Place oven rack in middle of oven and preheat broiler to high. 2. Slice shallots and garlic, chop parsley. Make: 1. Drizzle oil in a roasting pan. 2. Pat fish dry with paper towels and arrange in pan. 3. Sprinkle evenly with paprika, shallots, butter, and garlic; pour wine over. 4. Broil 10 minutes or until fish flakes easily when tested with a fork, basting frequently. 5. Arrange fish on a platter; season with salt and pepper. 6. Stir parsley into pan sauce; drizzle sauce over fish. Serve: with lemon wedges.

Notes

For Salsa Flounder: 1. Omit the salt. 2. Use 1/2 teaspoon salt-free Cajun/Creole seasoning in place of paprika. 3. Use 3/4 cup salsa in place of wine. 4. Swap in cilantro for parsley, and serve with lime wedges instead of lemon.
