Chicken-Broccoli Mac and Cheese with Bacon

Ingredients

  • 6 cups chopped broccoli florets
  • 4 bacon slices, coarsely chopped
  • 16 ounces skinless boneless chicken breasts cut into 1/2 inch pieces
  • 2 tablespoons minced fresh garlic
  • 2 teaspoons sea salt, divided
  • 2 1/2 cups milk
  • 2 cups chicken broth
  • 1/2 cup plus 1 teaspoon all purpose flour
  • 16 ounces uncooked elbow macaroni
  • 10 ounces cheddar cheese ( about 2 1/2 cups )

Directions

Prep: 1. Boil water for pasta. 2. Cut/chop: broccoli florets, bacon slices, chicken breasts. 3. Mince garlic. 4. Preheat broiler to high. 5. Combine 3/4 teaspoon salt, milk, broth, and flour, stirring with a whisk. Set aside. Make: 1. Cook pasta according to package, adding broccoli to pot during last 2 minutes of cooking. Drain when done. 2. While pasta cooks, place bacon in a large ovenproof/cast iron skillet over medium-high heat; cook 4 minutes or until browned, stirring occasionally. 3. Remove bacon from pan with a slotted spoon; reserve 1 1/2 teaspoons drippings in pan. 4. Sprinkle chicken with 1/4 teaspoon salt. Add chicken to drippings in pan; cook 4 minutes 5. Sprinkle with garlic; cook 2 minutes 6. Add milk mixture to pan; bring to a boil, stirring frequently. Cook 2 minutes or until thickened. 7. Add pasta mixture and half the cheese; toss to coat. 8. Sprinkle with remaining cheese and bacon. Broil 2 minutes or until cheese melts and just begins to brown.

Notes

If you want to take this up a notch try adding tumeric when you add the garlic. Tumeric has great health benefits and gives this dish a vibrant orange color. If you don't have an oven proof skillet just prepare this in a sauce pan and transfer to a 9x9 pan to bake.
