Citrusy Carrots with Parsley

Ingredients

  • 1 pound peeled carrots
  • 1/4 cup water
  • 1/2 orange, juiced
  • 1 tablespoon honey
  • 1 tablespoon unsalted butter
  • 1/4 cup chopped fresh parsley
  • sea salt and freshly ground pepper, to taste

Directions

Prep: 1. Cut carrots into 1-inch pieces. 2. Juice orange. 2. Chop parsley. Make: 1. Bring to a boil in a large skillet: water, orange juice, and honey. 2. Reduce heat to medium, add carrots, cover, and cook 8 minutes or until carrots are crisp-tender. 3. Drain and toss with butter, parsley, salt, and pepper.
