Prep: 1. Mince shallot. 2. Chop tarragon. Make: 1. Combine shallot, tarragon, vinegar, salt, and pepper in a jar; let stand 10 min. 2. Add olive oil; cover jar tightly, and shake. 3. Slice tomatoes, arrange on a plate and drizzle with dressing.
If you don't like tarragon any fresh herb will work.
