Prep: 1. Preheat oven to 450. Make: 1. Place butter or drippings in 9 inch square pan and place the pan in the oven to get hot while you prepare the batter. 2. Sift together the flour and salt in a bowl. 3. In another bowl, use an electric mixer to beat the eggs and milk until light and foamy. 4. Using mixer on low, mix the dry ingredients into the wet. 5. Remove hot pan with drippings, pour the batter on top. 6. Bake for 15-18 minutes, the top should be golden brown and puffy in places.
