Prep: 1. Preheat oven to 375. 2. Prepare cupcake tin either by greasing with butter or use paper liners. 3. Make coffee. Make: 1. Cream butter and sugar. 2. Add eggs and vanilla, and beat well. 3. Sift together: flour, cocoa, baking soda, and baking powder. 4. Alternating between dry ingredients and milk, add both into butter mixture. 5. Mix in coffee. 6. Bake in cupcake tin at 375 for 20 minutes.
Totally from scratch but practically as fast as a "mix." The coffee is for liquid and flavor so decaf is fine. We love to use leftover coffee.
