Prep: 1. Slice/chop mushrooms and scallions. Make: 1. Cook soba noodles according to package instructions. 2. Bring broth to boil. 3. Put miso in a bowl and add a ladleful of hot broth; whisk until smooth. 4. Add the miso to the broth with the mushrooms. Cook for 5 minutes. 5. Add drained noodles, garnish with scallions, and serve.
Shiitake mushrooms can sometimes be expensive. Try white mushrooms if you are looking for a cheaper option! Make this heartier by adding seafood, sliced chicken breasts, tofu or thinly sliced beef. You can also pump up the flavor by trying mushroom broth instead of vegetable broth if you can find it.
