Prep: 1. Mince basil. 2. Grate onion and parmesan. Make: 1. Mix together bread crumbs, grated parmesan, and 2 tablespoons of minced basil. Set aside in a shallow dish. 2. Mix marinara and 2 tablespoons basil in small saucepan, heat over low. 3. Put 1 1/2 tablespoons of that sauce into a large bowl and add chicken, 1/2 tablespoon oil, onion, and salt and pepper to taste. 4. Shape into four 1/2-inch-thick patties; coat with bread crumbs. 5. Heat 1 1/2 tablespoons oil in large nonstick skillet over medium heat. Cook patties about 4 minutes and flip. 6. After flipping patties top with mozzarella cheese. Cover; cook until cooked through and cheese is melted, about 3 minutes. 7. Assemble burgers on buns, topped with basil leaves, and warm marinara.
