Prep: 1. Preheat grill to medium-high. 2. Slice chicken, rub with taco seasoning. 3. Slice red onion. (leave peppers whole for now) Make: 1. Brush both sides of the onion rounds and whole peppers with 2 tablespoons oil. Season with salt and pepper. 2. Grill onions and whole peppers on the edges of the grill until spottily charred and crisp-tender, about 8-12 minutes, turning once or twice as needed. 3. Meanwhile, place chicken in the center of the grill and cook until it is well browned, 3-4 minutes per side. 4. When the chicken and vegetables are done, transfer them to a large plate and tent with foil to keep warm. 5. Slice the grilled peppers lengthwise into 1/4-inch strips and add them to the bowl with the onions. 7. Serve with your favorite taco garnishes.

When the tortillas are done, wrap them in foil.
